Crab Quiche

INGREDIENTS:

Crust:
1 cup flour
¼ cup butter or margarine, melted
¼ cup hot water
teaspoon salt

Mix together with a fork. Press into pie plate. Do not pre-cook. (For sweet version, add 2 teaspoons sugar and ½ teaspoon vanilla.)

Quiche:
1 8-inch unbaked pie shell
6½ ounces cooked crab meat, flaked
2 eggs
1 cup light cream
1 teaspoon MSG
¾ teaspoon salt
dash cayenne pepper
3 ounces Swiss cheese, grated
3 ounces Gruyere cheese, grated
1 tablespoon flour

INSTRUCTIONS:

Combine eggs, cream, MSG, salt and pepper and beat well. Combine cheeses, flour and crab meat and sprinkle over the pie shell. Pour the egg-cream mixture over the cheese and crab. Bake in a 325 degree oven for 45 minutes to 1 hour. Cut in wedges and serve.
